PRAWN & GREEN MANGO CURRY

Ingredients
 
 

Medium Prawns

1.5 kgs

Vegetable

2 tbsp

Large onions

1 chopped finely

Medium green mango

2 peeled, sliced

Curry leaves

2 sprigs

Coconut milk powder

¼ cup

Boiling

2 cup

Cream

¼ cup

 

Spice Mixture

Toasted Coconut

½ cup

Garlic

2 cloves chopped

Turmeric powder

½ tsp

Coriander powder

2 tsp

Dried red chillies

3 long chopped

Salt

1 tsp

 
  Method  
  Shell and de-vein prawns
Grind all spice mixture ingredients until crushed.
Heat little oil in 24 cm pot, cook onion, stirring until browned lightly.
Add ground spice mixture, cook, & stir until fragrant.
Add prawns, mango slices, curry leaves & blended in coconut milk powder and boiling water.
Low the flame cook for 5 minutes covered or until prawns are tender.
Remove from heat, stir in cream.
